Cookies and Cream Blondies + Video
You know those blondies that are perfectly gooey and soft and rich and sweet? These are that. Only with the addition of crushed Oreo cookies and white chocolate chips. Which obviously only makes things better.
That's where the whole "cookies and cream" thing comes in. Because I'm of the belief that the minute you add Oreos to something, it can adopt the "cookies and cream" label.
And then, there are the white chocolate chips. I just figured that firstly, white chocolate is more akin to cream than dark chocolate is, so it would work better for our whole cookies and cream theme. And secondly, I thought that instead of having two types of chocolate add-ins in the blondies, the white chocolate would be a nice contrast to the chocolate Oreo cookies.

You know those easy, one-bowl recipes that you can whip up in less than ten minutes with minimal effort? These blondies are that too.
There are only eight ingredients in these blondies, including both the Oreos and chocolate chips. So you'll need a bowl, a spatula, the eight ingredients (butter, brown sugar, egg, vanilla extract, flour, salt, Oreos, white chocolate chips), an eight-inch baking pan, some baking paper, and an oven.
And then you'll just need seven or so spare minutes to mix together all the ingredients in that one bowl, with that single spatula, before sliding the pan into the oven. And twenty minutes later, your cookies and cream blondies shall emerge, ready to be consumed.
Now, since the Oreo cookies and white chocolate chips really pack in the sweetness when you add them to the dough, I cut back on the amount of sugar I'd usually put in such a recipe.
What I didn't cut back on though were the Oreos and chocolate chips. Combined, there's a full cup of them. And this isn't a big recipe. To give you some perspective, the one cup of add-ins is equal to the total amount of flour in this recipe.

Whatever you do, do NOT over bake these babies. You want to take them out of the oven at that 22 minute mark, even if your instincts are telling you that the blondies don't look ready or baked enough. Don't worry, they are.
These cookies and cream blondies are supposed to look kinda raw and under baked when you remove them from the oven. As long as they're just set in the center, take that tray out of the oven pronto.
Soft, gooey, dense, rich, easy, quick, flavorful, packed with Oreo cookies and white chocolate chips - these cookies and cream blondies sure will enhance your mid-October blues, in the event that you got a case of those.
Cookies and Cream Blondies
Yield: about 20 blondies
1 stick (4 oz.) butter, melted
3/4 cup very loosely packed brown sugar
1 egg
2 teaspoons vanilla extract
1 cup packed flour
1/2 teaspoon salt
1/2 cup crushed chocolate Oreo cookies
1/2 cup white chocolate chips
Preheat oven to 350 F. Line an 8x8" baking pan with parchment paper, leaving some excess hanging over for easy removal later.
In a large bowl, mix together the melted butter and brown sugar until smooth. Add in the egg and vanilla extract and whisk vigorously until mixture is smooth again.
Pour flour and salt on top of wet ingredients and mix everything together until just combined. Stir in Oreos and chocolate chips last.
Drop dough into prepared pan and spread to edges evenly. Sprinkle more crushed Oreos and chocolate chips on top if desired. Bake blondies for about 20-23 minutes, or until the center is just set. Don't over bake!
Let blondies cool before lifting them out of the pan by the excess parchment paper and slicing into bars of desired size.
