Spiced Maple Glazed Baked Donuts with Toasted Coconut
Guyyyyss, I speak the truth when I tell you that these spiced maple glazed donuts have the best texture ever.
Seriously, they're like so soft and moist and tender and moderately fluffy with a teeny bit of denseness I could cry.
You know what else makes me want to cry tears of joy? The fact that Chanukah is in less than a week. Next Tuesday night, peoples! Happy days.
So, if you haven't figured it out already, Chanukah is the reason I'm posting a donut recipe this week. Because Chanukah is all about them donuts. Fried donuts, really. Because this holiday celebrates all things oily (amongst other things).
But fried donuts are a real pain in the *** to make. For both of us. And I've already posted an awesome fried donuts recipe on the blog a couple years back.
So baked donuts it is.
I'm aware that Chanukah is the time for all things drenched in oil. And I'm aware that these donuts are not drenched in any oil. But still. They're donuts. Kind of.
So these maple glazed donuts are still made in the spirit of the holiday, even if they don't actually leave your fingers coated in a layer of grease.

As the title states, they're spiced. Meaning they've got cinnamon and nutmeg and ginger in them. Meaning these spiced donuts are rich and flavorful. Meaning they're gonna give you warm and fuzzy feelings, making them perfect for these bitterly cold times currently upon us.
Also, these baked donuts have got a glossy, sticky, sweet, cinnamony, maple glaze atop them. Lemme just say, the glaze game on these donuts is strong. Mighty. Super-solid stuff.

Spiced Maple Glazed Baked Donuts with Toasted Coconut
Yield: 12 donuts
2 cups flour
¾ cup sugar
2 teaspoons baking powder
½ teaspoon salt
1 ½ teaspoons cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
1 large egg
1 cup milk (or non-dairy milk substitute)
½ cup oil
2 teaspoons vanilla extract
Maple Glaze:
1 ½ cups powdered sugar
½ teaspoon cinnamon
2 tablespoons maple syrup
2 tablespoons oil
½ teaspoon vanilla extract
2-3 tablespoons milk (or non-dairy milk substitute)
Garnish (optional):
¾ cup coconut flakes
Preheat oven to 350 F. Grease 12 donut molds well.
In a large bowl, whisk together the flour, sugar, baking powder, and spices.
Make a well in the center and add in the rest of the ingredients. Whisk everything together until smooth.
Fill donut molds almost to the top. Bake for 11-12 minutes, or until donuts spring back when touched and a toothpick inserted comes out clean.
Meanwhile, spread coconut flakes out on a baking sheet and toast in oven (on 350 F) for about 8 minutes, or until golden.
Allow donuts to cool in molds for a few minutes before easing them out of the molds with a knife. Let cool completely.
Glaze: Whisk together all the glaze ingredients until smooth. Dip the top of each donut into the glaze, coating evenly. Sprinkle with toasted coconut before glaze sets.
