Simple Strawberry Almond Cake + Video
When I say simple strawberry almond cake, I don't mean that the flavors in this cake are simple. I mean that this is a super simple cake to make. Especially for the amount of flavor payoff you'll be treating your tastebuds to.
Also, this is definitely the first cake I'm posting on the blog that contains strawberries. In fact, I think this might even be the first recipe I'm posting to the blog in general (cake or not) to ever include strawberries.
I believe this is cause for celebration *pops champagne*

Do you like summer? Do you like cakes that taste like summer? If you answered yes to both of these questions, or even just to the second question, you're going to love this cake.
Because this recipe really is summer in a cake. Easy, quick, light, fluffy, moist, packed with fresh strawberries, enhanced with a kick of almond flavor, sprinkled with sliced almonds (not that I can say with conviction that almond extract and sliced almonds are the new "it" foods for summer or anything) - what more can you ask for from a summer cake?
And there's not just almond extract and sliced almonds in this strawberry cake. There's also almond flour. A combination of all-purpose flour and almond flour is used in this cake, yielding a slice with the perfect balance of lightness/fluffiness/moistness and richness/denseness/crumbliness.
Activity: try to say those six adjectives three times fast. My mouth is hurting after one round.
You know I love my one-bowl recipes. So of course, this cake is a one-bowl recipe. Aside from the fact that you'll have to slice your strawberries on some sort of cutting board or plate, but cutting boards and plates are not bowls, so I'm still allowed to consider this a one-bowl recipe, right?
This strawberry almond cake is so soft and moist. I wouldn't call it super light and fluffy, because it has a richness and mild denseness to it. Which I LOVE. But it could still be called light and fluffy. Just not super light and fluffy.
I also LOVE almond extract and any recipe that has that almond paste flavor in it. You could always skip the extract if you're not a fan, but, em, my strawberry almond cake here definitely included the almond extract. Plus a little more.
Soft. Fluffy yet dense. Vanilla-y and almond-y. So much flavor. Sweet, fresh, soft strawberries and crunchy, nutty sliced almonds in every bite. So much goodness. So much summeryness (no, that's not a word).
Get your measuring cups out.
Simple Strawberry Almond Cake
Yield: 9" cake
3/4 cup oil
1 cup sugar
2 eggs
2 teaspoons vanilla extract
1 teaspoon almond extract
1 1/4 cups flour
3/4 cup almond flour
1 teaspoon baking powder
1/4 teaspoon salt
pinch nutmeg
1 1/2 cup sliced, fresh strawberries
1/4 cup sliced almonds
Preheat oven to 350 F. Line and grease a 9" pan (springform pan best).
In a large bowl, whisk together the oil, sugar, eggs, and extracts vigorously until smooth.
Pour flour, almond flour, baking powder, salt, and nutmeg over wet ingredients and mix everything together until just combined. Stir in strawberry slices gently.
Pour batter into prepared pan, smoothing top. Top with more strawberry slices if desired, and sprinkle with the sliced almonds.
Bake cake for about 35-45 minutes, or until it's golden brown and a toothpick inserted into the center comes out clean.
Let cake cool before releasing from pan and slicing.
