How to Make Salted Caramel
Get a pot out. Get your measuring cups out. Get out a rubber spatula. Get out some sugar, butter, heavy cream, vanilla extract, and salt. Now let's begin.
Salted caramel. So rich. So smooth. So creamy. So perfectly sweet and salty. So good. And so quick and easy.
I'm serious. All you need to make homemade salted caramel is 5 ingredients and 10 minutes. But you might also need a step-by-step photo tutorial. And a video tutorial. In case you're not convinced about the effortlessness.
Because while homemade salted caramel is pretty basic, it's very possible you've never attempted making it before. And it's also very possible that you'll burn your caramel the first time you try making it. Like I did. I get it; it's a little daunting.

Salted caramel can be used for so many desserts. Here are just a few ideas:
1 - drizzle it on top of your ice cream
2 - spread it over a cheesecake as a topping
3 - use it as a surprise filling in a chocolate lava cake
4 - stuff any number of bar recipes with a layer of it (coming next week eeeeeeeeeeek)
5 - use it as a filling for homemade chocolates
6 - make caramel candies
7 - salted caramel and apple everything (apple pie, apple bars, baked apples, apple cobbler, straight over raw apple slices)
8 - use it as a filling in between the layers of a layer cake
9 - drizzle it over frostings on cupcakes and cakes
10 - drop a dollop of it into your hot chocolate
11 - dip a large spoon into it and consume

So let's begin. Here are the five ingredients you'll need:
1. Sugar 2. butter 3. heavy cream 4. vanilla extract 5. salt
Place 1 cup sugar into a medium saucepan over a medium flame. Stir it frequently with a rubber spatula.
SUGAR WILL CLUMP AND THEN MELT INTO AN AMBER LIQUID.
once sugar is melted, add in 2 oz. chopped butter right away. Caramel will bubble rapidly. Stir butter until melted.
add in 1/2 cup heavy cream slowly while stirring. let mixture boil for 60 seconds.
Remove mixture from flame and stir in vanilla extract and salt. And you're done.
HOMemade salted caramel
1 cup granulated sugar
1/2 stick (2 oz.) chopped butter, room temp.
1/2 cup heavy cream (do not substitute milk)
2 teaspoons vanilla extract
1-1 1/2 teaspoons salt (depending on preference)
Pour sugar into a medium saucepan and place over a medium flame. Stir frequently with a high-heat rubber spatula. Sugar will start clumping and then melt into an amber liquid.
Once sugar is completely melted, add in chopped butter right away. Take care, because the caramel will bubble a lot when you pour butter in. Stir till butter is melted.
Once butter is melted, pour in the heavy cream carefully and slowly while stirring caramel. Caramel will bubble a lot again. Allow to cook for about 60 seconds and then remove from flame.
Stir in vanilla extract and salt and then let caramel cool slightly before using. You can transfer caramel to a bowl and place in fridge to speed up cooling process.
*Note: caramel can be made ahead and kept in fridge in air-tight container for up to 2 weeks. To liquify again, warm up for a few seconds in microwave or pot.
