Yes, these popsicles actually taste like cookie dough. A creamy, milky, frozen version of cookie dough. And yes, they really do only have five ingredients. Chocolate chips/Oreo cookies being included in that list of five. 

And yes, these cookie dough popsicles are the easiest things to make. You literally cannot go wrong, so long as you know how to use a measuring cup. But even that skill set isn't essential, because you could probably just eyeball the amounts for each ingredient and your popsicles will still turn out great. It's not like there's any baking involved or chemical reactions that need to be going down here.

So you'll be just fine, even if you consider yourself the most amateurish of bakers/cooks.

To get the creamiest, richest popsicles, you'll want to use whole milk. Now, I've never tried this recipe with heavy cream, but I suspect heavy cream might make these popsicles even more delicious. But I do know for sure that these cookie dough popsicles are wonderful with full-fat milk. So you're safe with that.

What I have tried is this recipe with low-fat milk, and once, even almond milk. The popsicles were good. But a bit more icy and less creamy than the full-fat version. So if you're out of whole milk and just need to make these cookie dough popsicles stat, low-fat milk will work in a pinch.

So let's talk about the lengthy list of ingredients for these popsicles: milk, brown sugar, vanilla extract, salt, and chocolate chips or Oreo cookies.

Or both chocolate chips and Oreo cookies. Because you can never have too much of a good thing, amiright?

The milk is obviously the base for the popsicles. It's what gives them the right to be called ice cream popsicles in the first place. It also helps make the popsicles creamy and rich.

The brown sugar sweetens the popsicles and is what lends that cookie dough flavor and tan color. So don't substitute white sugar for the brown sugar unless you hate cookie dough. 

The vanilla extract adds more flavor and also helps impart that cookie dough taste. And then the salt just brings out all the other flavors. 

And last up, mini chocolate chips and/or crushed Oreo cookies. Because cookie dough has to have chocolate chips. You'll want to use mini chocolate chips specifically for these popsicles, because they tend to distribute better.

But I also included the option for Oreo cookies, because Oreo cookies mixed inside a cookie dough is totally a thing, and because the Oreo cookies, unlike your average homemade cookies, don't completely turn to mush in the popsicles and add a whole new level of flavor and texture to the popsicles.

One bowl, five ingredients, one mixing apparatus, two and a half minutes, and your cookie dough popsicles will be in the freezer. Only problem is, you'll have to wait a good few hours till these pops freeze before you can actually consume them. But that's life. *sigh*

Yield: about 6 popsicles

2 cups whole milk*
1/2 cup brown sugar, packed
2 teaspoons vanilla extract
pinch of salt
1/3 cup mini chocolate chips or crushed Oreo cookies (or combo)

Heat the milk in a pot or microwave till warm to the touch.

Stir brown sugar, then vanilla extract and salt into milk until dissolved. 

Drop a handful of chocolate chips/Oreo cookies into each popsicle mold. Fill each mold to the top with milk mixture.

Insert sticks into molds and freeze popsicles until hardened, at least several hours or overnight. 

*Note: you can sub low-fat milk or even almond milk, but your popsicles will be more icy and less creamy.
