Gluten-Free Double Chocolate Walnut Cookies
Ugh I love cookies so much. Ugh in a good way, obviously.
And UGH these cookies!!! These gluten-free double chocolate walnut cookies. SO UGHING GOOD.
But for real. These gluten-free chocolate cookies are like so, so good. And they’re filled with so much wholesome goodness. And they’re even chewy!! And a chewy cookie is my most favorite type of cookie. Did you know?
Do you love Cocoa Pebbles, the cereal? Because these double chocolate cookies kinda taste like Cocoa Pebbles. Only they’re more delicious. And more chewy. And more wholesome. And these cookies are also just as perfect accompanied with milk.
Do me a favor, will you? I would like you to take a moment and visualize dunking one of these dark and rich chocolate cookies into a tall glass of cold milk. And by one of these cookies I mean seven of these cookies.

Here’s why these chewy chocolate cookies are wholesome (ish):
they’re made with almond flour in place of regular flour
they’re sweetened with only coconut sugar
they contain no butter or oil - just walnuts as the fat
they’re full of antioxidant-rich cocoa powder
Here’s what makes these double chocolate cookies SO UGHING GOOD:
they’re full of rich, deep chocolate flavor
they’re so soft and chewy with the slightest crisp at the edges
they’re packed with melty dark chocolate chunks
they’re studded with crunchy walnut pieces
they’re better than Cocoa Pebbles
They’re lovely. Truly.
Oh. Also. These double chocolate cookies come together in literally five minutes. In a food processor. You just dump all the cookie ingredients into your food processor and blend them together until a dough forms. And then you stir in the chocolate chunks and chopped walnuts.
And then you shape the cookies, flatten them, and one of my favorite parts: sprinkle them with flaky salt. YESSSS. Dark chocolate + salt = one of my favorite dessert flavor combos everrrrrr.
The salt is optional, though. But very much recommended, of course.
Soft and chewy. Rich and dense. Chocolatey and nutty. Dairy-free and refined-sugar free. Quick and easy.
Gluten-free double chocolate walnut cookies - why are you so good to me?
Gluten-Free Double Chocolate Walnut Cookies
Yield: about 16 cookies
1 cup almond flour
2/3 cup coconut sugar
1/3 cup cocoa powder (I like using 1/6 cup regular cocoa and 1/6 cup special dark cocoa)
1/3 cup walnuts
1 small egg
2 teaspoons vanilla extract
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chunks/chips
1/3 cup walnuts, chopped
-Flaky salt, for sprinkling (optional)
1. Preheat oven to 350 F. Line a large baking sheet with parchment paper.
2. Blend the almond flour, coconut sugar, cocoa powder. walnuts, egg, vanilla extract, baking soda, and salt in a food processor until a smooth dough just forms. Stir in the chocolate chunks and walnuts by hand.
3. Round medium sized balls between palms and space out onto baking sheet. Flatten cookies with your palm. Sprinkle with flaky salt if desired.
4. Bake for 8-10 minutes, until tops of cookies are cracked and you can just lift the edge of a cookie off the sheet with your finger. Let cookies sit and firm 10 minutes before moving.
