Flourless Double Chocolate Peanut Butter Cookies
It’s still winter. Which means rich, indulgent, comforting, chocolatey desserts are still very much required.
And I know. I know I posted triple chocolate scones just last week. Which may lead some naysayers to assert that I’m overdoing it and should take a break from the chocolate desserts. But, if you think about it, I actually am scaling back. Because today’s recipe is only of the double chocolate variety, mmmkay?
Flourless double chocolate peanut butter cookies. Think rich creamy peanut butter. And deep chocolate flavor. And oozing, melty chocolate chunks. And flaky salt. Combined into one intense, soft, thick, gooey, tender, sweet and salty cookie. Gluten-free, too.
Oh also. All these chocolate desserts are getting us somewhere. Because it’s Valentine’s Day soon. So the tender triple chocolate scones from last week. Or these double chocolate peanut butter cookies. (Or next week’s Valentine special recipe.) Are all great dessert options for the occasion.
But enough justifying. Regardless of the holiday or season. Imma post as many rich chocolatey desserts as I wanna. It’s my right as an American. And dessert blogger. And winter-detester. Etcetera.
These flourless double chocolate peanut butter cookies are some of the quickest and easiest cookies you’ll ever make. One bowl. A few basic ingredients. A vigorous stirring. And the cookies are ready to be popped into the oven. And out, less than ten minutes later.
As always, you can save some time by using chocolate chips. BUT. I highly suggest chopping up some bittersweet chocolate to make hefty chunks that’ll melt in the oven into oozing, hot, gooey chocolate puddles. See photos below for reference.
Being that these chocolate peanut butter cookies are flourless, the peanut butter acts as both the flour and the fat in this recipe. Which means the peanut butter ain’t masked by no oils or butters or flours and its flavor shines through in the most intensely peanut buttery way.
And the chocolate flavor: A generous amount of cocoa powder adds more richness and a new depth of flavor to these gluten-free peanut butter cookies.
Peanut butter. Plus chocolate. Plus a sprinkling of flaky salt over the cookies. Flavors for the ages, I tell you.
If you don’t want to endure the eternal wait (15ish minutes) it takes for these chocolate peanut butter cookies to firm up before being able to be moved and consumed, go right ahead and use a spoon or something to scoop up that soft, rich cookie off the sheet and eat it straight away, piping hot. I will not judge. In fact, “pride” and “respect” might be the words I’d conjure in my mind for such an action.
Soft. Rich. Intense. Gooey. Dense. Indulgent. Thick. Flavorful. Peanut buttery. Chocolatey. Gluten-free. Quick. Easy. With oozing chunks of bittersweet chocolate in every bite.

Flourless Double Chocolate Peanut Butter Cookies
Yield: about 30 large cookies
2 cups smooth peanut butter (best if it’s not natural peanut butter)
1 1/2 cups brown sugar, packed
1/4 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
2/3 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips/chunks
-Flaky salt, for sprinkling (optional)
1. Preheat oven to 350 F. Line two large baking sheets with parchment paper.
2. In a large bowl, stir together the peanut butter and sugars until smooth and no longer grainy.
3. Add in the eggs, vanilla extract, cocoa powder, baking soda, and salt and stir vigorously until mixture is smooth. Mix in chocolate chips or chunks last.
4. Round large pieces of dough between your palms and space evenly onto baking sheets. Flatten slightly. Sprinkle cookies with flaky salt if desired.
5. Bake for 9-12 minutes, until the tops of cookies are cracked and the edges are just set. Let the cookies sit and firm up on the sheets for 15 minutes before moving them.
